Couscous Salad

This is my recipe , it is a fusion of salad and Arabic couscous. Some of my friends said they don’t get couscous in India you could try substituting couscous with bulgar wheat ( dalia)  and cranberries I guess can be replaced by rasins .This salad is very filling and can easily substitute your lunch or dinner. I had first seen couscous on Nigella’s TV show 6 years back  and am using it since.

Serves : 6

Ingredients

  • 150g of dried couscous
  • boiling water
  • 1 spring onion, finely chopped
  • 1/2  capsicum, finely diced
  • 1 tomato, finely diced
  • 1 cucumber, finely diced
  • 2 carrot grated
  • 1/4 cup peas boiled
  • 1/4 cup sweetcorn boiled
  • 30g sweet cranberries
  • 1 tbsp lemon juice
  • 1/2 tsp  crushed peppercorns
  • 1tsp cumin powder
  • pinch of salt

  1. Pour the boiling water over the dried couscous add salt, cumin powder and crushed peppercorns and cover.
  2. While this is fluffing, prepare your vegetables.
  3. When cooled, add your chopped vegetables, cranberries  & lemon juice.
